Mike Sullivan was our guide for the tour of ECHO.  Here he tells Paul Reisner how to grow food with very little soil.  The pole-beans behind him are planted on a piece of carpet.  The bucket is filled with compost tea, covered tightly and turned upside-down on the carpet.  The tea leaks out slowly, through a half-inch hole in the lid of the bucket, to water and feed the plants.  ECHO specializes in growing food under difficult conditions and has discovered several fast growing very nutritious plants which they make available to developing countries to fight hunger.  Anyone traveling to a country where hunger is a problem can and should go to ECHO first.
